Pre-workout hunger pangs? Endive boats to the rescue!

It is one of those afternoons.  I need to have a snack before working out and I feel like salt and spice and protein.  If you are ever in one of those moods, try these “ready in 5 minutes” endive boats!  They are crunchy, spicy, have protein and serve as the perfect snack!

Here’s what you need to get your “life boats” ready!

Crunchy peanut butter, salted peanuts, sriracha sauce, chives, endives

Simply pull apart the endive leaves.  Arrange on a plate.  Smear with peanut butter, drizzle some sriracha sauce, add a couple of peanuts and add a garnish of sliced chives.


Your crunchy, yummy endive boats are ready to eat!  I’ve got to admit they do hit all the right notes and sure perk you up!
