France meets India Galette aka a Puran Poli Galette. Puran polis are a delicacy from Maharashtra, India. These are delicious, thin, split chick pea with jaggery flatbreads flavored with saffron, cardamom and nutmeg. Galettes originated in France in the 13th century and come in an assortment of types.

Can you imagine eating a vegetarian curry with your rotis or rice, except it does not have any veggies? Neither could I till I discovered this totally drool worthy combination of sweet, salty, spicy, and sweet that had my taste buds singing, but not necessarily pictures humming!

A little twist on my focaccia that I always make with rosemary or sage. This time it’s with fenugreek leaves and potatoes, very much drawing on the flavors we eat in winter in India and yet bringing it together beautifully into a lovely focaccia. Just super pumped that this worked so well. Dropped off some batches for friends and the verdict was that the flavor pairing works. What’s your fave kind of focaccia?

It’s an offering to God - Kadha Prasad, a sweet served at Gurudwaras and something that I want to partake in at least once at the Golden Temple in Amritsar. I’ve tried this multiple times with different recipes and somehow it never felt just right. Today, thanks to @ranveer.brar ‘s guidance on using wheat flour (atta), sugar, water, and ghee in equal quantities and just focused stirring, it turned out beautifully. That’s the verdict from my mom. The ultimate feedback will probably come later in the day from my mom’s friends who are from Punjab and have beeen tasting and making this for their entire lives. Saying a prayer it meets with their approval too 😊

Once upon a time, there was a young girl in India who was totally into food. Her favorite pastime was reading recipes and articles about foods from lands she could never dream of visiting. She did not have an oven and there was never enough money to splurge on things like baking. But somehow her mom saved up a little and sent her to a baking class. The girl knew she could not squander this opportunity, so she paid close attention and took meticulous notes. She was super excited to learn a recipe for pineapple cake, a slice of pastry her mom would get on rare occasion and split multiple ways for the family to share. Well, that girl grew up, traveled the world, and yet her memories of that shared pineapple cake from Monginis was always a little slice of happiness. Well, many moons later, I made it for my mom today and the joy of watching her eat the cake and lick up the remaining cream and pineapple was priceless 💕💕

Let’s play board games, shall we? Inspired by the numerous food boards being created, I decided to make one with the ingredients at hand. Starting with a base of greek yogurt, layering on roasted sweet potatoes, adding on avocados, coriander/date chutneys and finishing with cilantro leaves, tomatoes, green chilies, lemon juice, chaat masala, and sev. It was a sure hit way to brighten up a dreary day.
