Sometimes a flavor craving can be satisfied with some quick doctoring. Post a workout, I was craving middle eastern flavors. But with limited time before heading to work, I cooked two eggs and had them in a platter with Zhoug, amba, cilantro, chilies and a dash of berbere. So this “kheer” or rice pudding is what came about as a result of @chefvineet mentioning on @master.chef.india that his mom made cauliflower kheer. Before you say ugh, let me say that this cauliflower rice slow cooked in almond milk and sweetened with monk fruit is a gift for those having to watch their sugar and carbs. It’s just a breakfast of leftovers.
